Ingredients for bottom dough:
- 150g/5.29oz butter
- 120g/4.23oz castor sugar
- 250g flour (soft or plain)
- 4 yolks
- 6g/0.21oz dough conditioner
- 10g/0.35oz vanilla sugar
You will also need some jam to spread onto the dough
Method:
1) Mix all the ingredients thoroughly to make firm and consistent dough. Roll it out just enough so that it will fit into the pan. Put it onto a pan covered with parchment paper or thin layer of fat. However, the parchment paper should be the primary choice.
2) Spread your favorite jam all over the dough.
Ingredients for second dough:
- 100g/3.52oz butter
- 100g castor sugar
- 100g ground walnuts
- 100g flour
- 4 egg whites
- 6g/0.21oz dough conditioner
- 10g/0.35oz vanilla sugar
Method:
1) Mix the butter and sugar until it becomes a crème. Then add walnuts, flour and dough conditioner. Prepare the egg white snow and add it into the mix. Spread the second dough onto the layer of jam.
2) Put your fine walnut cake into the oven that has been heated up to 180 – 200 degrees Celsius/356 – 392 Fahrenheit and let it bake until the cake gets a gold-ish color.
3) Optional step is to glaze your fresh walnut cake with chocolate. The chocolate glaze can be prepared by melting down baking chocolate. You can also add 3-5 grams/0.1-0.17oz of shortening.
To conclude, fine walnut cake is quite easy to make yet delicious dessert. Chocolate glaze will give it a classier look. However, fine walnut cake is delicious even without the chocolate glaze.
